Xanthan Gum is a natural product which you can add to cakes, pastries breads etc., which you are making with gluten-free flour to help them stick together.
Because the gluten is the part that helps the flour to hold together. When you bake gluten-free without the gum the results can be very crumbly and fall apart. This makes pizza and pies very hard to achieve and I really miss pizza.
If any of you are coeliac I highly recommend the health food store on stockwell street can’t remember the name, they have a great range and are very friendly and helpful.
