Soup recipes

    Hi all,

    I love soup on cold wintery days like this – wondering does anyone have any nice hearty soup recipes????

    Preferably without cream or anything fattening etc, thinking of op trans!

    I have a good one… its lovely making it for years its almost free for ww points but not like water iykwim…

    1 large spud
    few carrots
    Leek or onion……. my mam adds whatever she has in the press celery, turnips etc..
    Stock cube
    Salt and pepper

    chop veg, cover with water and bring to the boil, simmer and add stock cube simmer for 15 mins…. blend or mash. If not on op trans a dribble of full fat milk just to make it creamy…… my father in law lord rest him loved it…

    This is so easy and a big hit with the kids also.
    roast carrot and red pepper soup
    roughly 1 bag of carrots and 5 red peppers ( equal amounts)
    chop them all and roast them in the oven with a little olive oil
    fry an onion and add i pint of chicken stock
    add the peppers,carrots ,stock ,onion, in a big pot boil till soft and blitz with a handblender and add the juice of half a lime yummy

    leek and potataoe

    2 leeks
    3 potatoes
    onion (optional)
    chicken stock

    chop all and add to big pot add stock till its coverd. bring to boil.. i add it to the blender than but you dont have to do it

    Making this about 3 times per week, kids love it

    3 leeks
    2 stocks celery
    3 carrots
    1 parsnip
    1 sweet potato
    1 onion
    1-2 potatoes
    garlic
    cauliflower floret if handy
    1 stock cube
    Plenty of pepper

    saute onion & leeks for a couple of mins, and then add rest of veg. cook for couple of mins before adding stock.
    Bring to boil cook for about 20 mins and then blitz

    Remember sweet potatoes are better than normal potoates esp when you are dieting

    Oh Lai that sounds lovely… good tip on sweet spud! my mam puts celery into her soup and its give a lovely taste
