    125g plain flour
    pinch of salt
    1 egg
    1/2pint (264ml) milk
oil of choice for frying (I use olive oil)

By hand mix egg and milk together and grdually add to flour and salt. Whisk to a smooth batter.

In food processor mix all ingredients until a smooth batter.

Heat oil on pan until very hot and add batter mix to cover base of pan, not too thick as won’t cook as well. (I use soup ladle for measuring out)

Turn down heat immediately to cook slower and then flip over to other side to cook. Should flip easily with a fish slice or similar once the 1st side is cooked enough.

    Simple and quick.

Wish someone would come out and make mine…….I feel like my mother.!!!! I swore I’d never stand over a cooker making pancakes like she did for her 6 children years ago and yet fast forward and here I am doing it for mine………its mad. You start cooking, they start eating and soon its a race to keep up with cooking the pancakes. They eat them too quick 😥 .But sure thats what being a Mum is about sometimes……we do crazy things to keep the little one’s, and big ones, happy.

My kids fav topping is golden syrup!
