Ingredients:
500g minced beef (or lamb if you prefer)
4 medium sized carrots
1 large onion
Generous Knob of butter
6-8 medium sized potatoes (Roosters & Maris Pipers good)
1/2 teaspoon Mixed Herbs
Salt/Pepper
2 Tablespoons of Bisto Powder
1 beef stock cube
1 veg stock cube
Teaspoon of Worchester sauce
Method:
Peel the potatoes, cut into quarters, place into a large pot and cover with boiling water. Add the vegetable cube in to the water, stir in and cook until the potatoes are cooked through (check with a knife).
While the potatoes are cooking, peel the carrots and chop into small diced squares. Peel the onion and chop finely. Add a generous knob of butter (around 30g) into a shallow pan. Add the carrots and onions to the melted butter and sautee on low-medium heat for approx 10 minutes until soft. Add the ground minced beef (or lamb) in with the carrots and onions. Crumble the beef stock cube over the meat and gently stir in until dissolved while the meat is browning. Add a dash (teaspoon) or worchester sauce, a sprinkle of salt, sprinkle of black pepper, 1/2 teaspoon mixed herbs and a table spoon of brown sauce to the mince, carrots and onions mix. Mix cold water with the Bisto powder in a jug until smooth and add into the beef mix. Stir gently for a few minutes until mix starts to thicken.
Layer the beef and vegetables into a large oven proof dish and set aside.
Mash the potatoes until there are no lumps. Do not add butter or milk to your potatoes, you want them to be light and fluffy. Once fully mashed, layer the mashed potato on top of the beef and vegetables. Be gentle, you want to leave little pockets of air so the gorgeous soupy beef underneath can bubble up through the potatoes! Cook on 180 for approx 40 mins and for the last 5 mins, put the grill on too to brown the potato.
Serve with warmed bread rolls, or green veggies or just as is! This is one of my children’s favourite dinners – as soon as they go back to school they start asking for it so I hope your family will enjoy it as much as ours does!
