The One Pot Beef and Bean Hotpot

Beef & bean hotpot

Serves 4


350g diced beef
1 onion sliced
2 peppers, seeded and sliced
1 large sweet potato, washed and cubed
4 cloves garlic – grated
Fresh grated ginger – piece about the size of your thumb
100g mange touts
100g baby corn – cut in half
1 tin chopped tomatoes
1 tin chickpeas, drained
1 tin red kidney beans, drained
100g cherry tomatoes
1 tsp. paprika
1/2 tsp. chili powder
1/2 tsp. paprika
250ml beef stock
1/2 tbsp. oil


Heat oil in casserole dish over a medium heat
Add beef and seal on all sides
Add onion, potato, garlic and ginger. Cook for 2-3 minutes
Add peppers, paprika, turmeric, chili powder and cook for further 2 minutes
Add corn, tinned tomatoes and beef stock
Bring to the boil, then cover with a lid and reduce the heat to simmer for 20 minutes
Resist the urge to stir the dish too often with the aim of keeping the shape of the potatoes
After 20 minutes, add in cherry tomatoes, mange touts, chickpeas and kidney beans. Stir through and leave for another 10 minutes until potatoes are cooked through
Before serving, check for seasoning and adjust as per your preference then serve
