Chocolate Mug Cake

Chocolate Mug Cakes with a Vanilla and Orange Mascarpone Topping Makes 2 small mugs or cups. This recipe comes to us compliments of Catherine Fulvio and Whirlpool. Use the microwave with this very quick and easy dessert.


4 tbsp plain flour
3 tbsp caster sugar
3 tbsp cocoa powder
1 egg
3 tbsp milk
3 tbsp rapeseed oil
1  tsp vanilla bean paste

2 tbsp chocolate drops

For the topping
1 tsp vanilla bean paste
2 tbsp icing sugar
2 tbsp mascarpone
1 orange, zest

2 small mugs or cups


Place the plain flour, caster sugar and coco powder into a medium bowl. Mix in the egg, milk and rapeseed oil and vanilla bean paste with a whisk.
Divide between the 2 small mugs or cups. Push 1 tbsp of chocolate drops into each mug.
To cook, microwave in the mug for 1 minute on high (750 watts microwave). Allow to cool for 2 minutes before serving it with the topping. Repeat the cooking process for the other chocolate mug.

Tip: Serve with a ginger and orange segments.
