The Perfect Fresh & Budget Friendly Lasagna!

We love Lasagna in our house but this week, for the first time I made it with fresh pasta sheets and wow, what a difference it made! I bought the Fresh Lasagna Sheets in my local ALDI, for only €1.59!! Along with the steak mince, vegetables and other ingredients, everything came in under €10 and I had enough to make 2 lasagnas!

Here’s how we make this fab fresh and oh so tasty Lasagna!!

Fresh Egg Pasta -Lasagne Sheets 250g Specially SelectedItalian Passata 500g CucinaLow Fat Natural Irish Yogurt 500g Duneen DairyGrated Red Cheddar And Mozzarella 475g ArdaghChunky Chopped Tomatoes 400g Cucina

Ingredients:

Fresh Lasagna sheets

Tin Tomatoes

1 x red pepper and 1 x yellow pepper

1 x courgette

1 x red onion

3 x garlic cloves

1 jar or carton of passata sauce

500g Steak mince

Grated mozzarella & cheddar cheese

Carton of natural yoghurt

Salt, Pepper, Steak seasoning, mixed herbs and 1 Oxo cube, for seasoning

Method:

Pour a little olive oil in a large pot and add the mince. Crumble the oxo beef cube and sprinkle over the meat as it browns. Add dashes of salt, pepper, steak seasoning and mixed herbs and mix into the meat. Once the meat is browned through turn off the heat.

Turn your over on to 180-190 degrees, Gas mark 5.

Finely chop the garlic, onion, courgette, peppers (I usually chop on a low setting in my blender). They should be small but not mushy. Add all the chopped veg to the meat and resume cooking on a medium hear. Add the tin of tomatoes and passata sauce and stir together. Cook for around 5-10 mins.

Place a layer of fresh lasagna sheets on the bottom of a roasting dish, covering the entire dish. Spoon some of the lasagna mix over the sheets until covered. Add another layer of lasagna sheets, covering the meat fully. Spoon some of the natural yoghurt on to each of the lasagna sheets and use the spoon to spread it evenly on the lasanga, sprinkle with the grated cheese. Continue to add layer of meat and then sheets with natural yoghurt and cheese.

Once you’ve got all the sheets and meat layered into your dish, add a final sprinkle of cheese and cover with tin foil. Pop in to the heated oven and cook for approx 30 mins. Remove the tin foil and cook for a further 10 minutes, to get the cheese bubbling on top.

Serve with some crusty bread, salad and coleslaw. The coleslaw really compliments the lasagna! This is the perfect dish for the family to tuck into. It’s a firm favourite in our house and I always make an extra large lasagna so I can freeze half of it for another day.
