Chicken Fajitas

Chicken Fajitas Serves 4


4 chicken fillets
1 tbsp. oil
2-3 peppers
3 tomatoes
2 cloves garlic
1 red onion
12 mushrooms
50g crated cheese
1-2 tortilla wraps per person – depending on size
Salt and pepper
1 tsp. turmeric powder
1/2 tsp. chilli powder
1 tsp. cumin powder
1 tsp. coriander powder


Prepare all the vegetables – finely chop garlic, cut onion and peppers into long thin strips, dice tomatoes and slice mushrooms
Cut chicken into thin strips
Heat oil in hot wok
Add garlic and onion – remember to keep everything moving with a wooden spoon
When onion starts to soften, add chicken
To this, add spices and stir
Once the chicken is sealed, add peppers and cook for about 3 minutes
Then add mushrooms. When they start to cook, finally add tomatoes
Cook through and taste for seasoning
Heat the tortilla wraps as per packaging
Serve by filling the tortilla with the chicken and vegetable, topped with grated cheese, and wrap it up

Optional extras – add salsa, sour cream, guacamole or lettuce to the wrap when you’re building it up.
