Chicken Cacciatore


3 Tbsp. Olive Oil
2 onions – sliced thin
4 cloves of chopped garlic
4 chicken breasts (cut into quarters)
1/2 cup White Wine
1 – 28 Oz. can diced tomatoes
1/4 cup Tomato Paste
1 Tsp. dried rosemary
1/2 Tsp. Hot Red Pepper Flakes (Optional)
Salt and Pepper to taste

Heat Oil and saute garlic and onions, set aside. Add chicken to frying pan and brown on both sides, adding more oil, if necessary. Top chicken with onions and garlic. Add wine and simmer until it is reduced by half. Add tomatoes, Tomato paste, rosemary and hot pepper flakes. Season with salt and pepper. Reduce heat to very low, partly cover pan, and simmer until chicken is very tender, about 30 minutes. If sauce becomes too thick, add a little water
