Tuna & Rice Casserole

This recipe also freezes well. Perfect for a hectic days supper! Tuna & Rice Casserole


1 can cream of mushroom soup
3 eggs
1 cup of cooked pasta or rice
Broccoli or spinach
1 can (6.5 oz) tuna – drained
3/4 cup grated Cheddar Cheese
3 Tbsp. Parmesan cheese
1/2 Tsp. dill weed
1 small chopped onion
Chopped mushrooms (optional)
Salt / Pepper to taste


Combine soup, eggs, broccoli, pasta/rice, tuna, onion, mushrooms, dill, salt and pepper with Parmesan cheese and cheddar cheese. Mix well. Pour into microwave safe pie-style plate. Cover with waxed paper and microwave for 5 minutes. Stir well and sprinkle with Parmesan cheese. Microwave for another 4 to 5 minutes and sprinkle with remaining cheddar cheese. Let stand covered for 5 minutes and serve
