Very Healthy Lasagne

Serves 4-6
500g lean mince
1 tin of chopped tomatoes
1 chopped onion
10 mushrooms, sliced
3 carrots, diced
2 peppers, diced
3 celery stalks, diced
3 cloves garlic, crushed
1” piece ginger grated
Heaped teaspoon dried mixed herbs
Good splash of Tabasco sauce
Salt and pepper
250g lasagne sheets
100g strong cheddar cheese, grated

Heat oil in a casserole dish on a medium heat and sweat the onion
Add ginger, garlic, carrots, celery and peppers – cook for 10 minutes
Add mushrooms, and cook for further 3 minutes
Add the mince and continue to cook until the mince is browned.
Add tomatoes, and season with herbs, salt, pepper and Tabasco sauce. Bring to a simmer, cover with the lid, and cook for about 30 minutes.
Taste for seasoning and adjust to preference.
Meanwhile preheat your oven to 180°C, and make the *white sauce
In a large baking dish, add a layer of mince (about 1/3rd of the entire mix), then a single layer of lasagne sheets, then the white sauce
Repeat this process until the dish is full
Top with a layer of grated cheese and place into your oven for 40-45 minutes
Serve with a freshly made salad
