Yummy banana muffins with walnuts as optional for nut lovers (can be made without nuts for anyone who prefers to leave them out)
250g self raising flour
180g caster sugar
120g butter (vegetable oil can be used instead of butter if preferred)
Spoonful maple syrup (optional)
I handful of walnuts finely chopped (optional)
Preheat the oven to 180 degrees.
Mix the egg, flour, salt, maple syrup, caster sugar in a bowl. Mash the bananas well in a separate bowl and then add to the mix, stirring in well until the mix has blended together. Add the chopped walnuts (optional).
Spoon into muffin cases and pop into the oven for approx 30 mins. You will know they are cooked when they are golden brown on top and when you insert a knife in to the middle of one of the muffins and the knife comes back out dry.
